There are many cuts of beef you can custom order from your butcher when purchasing a half or half of half. Most common is chuck, arm and sirloin tip roast. Rib-eye, T-bone and sirloin steak. Hamburger and hamburger patties. Below are the possibilities for more cuts like ribs, brisket, flank steak, stew meat, etc.
The lockers we use are very good about helping you with your first cutting order. You always have the option to get items like the tongue, heart and liver or you can simply so no to those as well. (If you are purchasing a good corn-fed steer or heifer from us, it would really not be a good idea to get all hamburger. You will get a great product, but financially it doesn’t make a lot of sense.)
